Sunday (Easter):
Pan Seared Tilapia with Tomato-Caper Sauce
Baked Sweet Potatoes
Asparagus Gratin

Monday:
Turkey Tacos (the cookbook’s version uses turkey instead of beef)
Chips & Salsa

Tuesday:
Stir-Fried Tofu and Bok Choy with Ginger Sauce
Brown Rice
Mandarin Oranges

Wednesday:
Crock Pot Rotisserie Chicken
Scalloped Potatoes (similar to this)
Green Beans
Oatmeal Rolls

Thursday:
Chili Con Carne
Oyster Crackers
Cantaloupe

Friday:
Leftovers

Saturday:
(All veggies)
Squash, Zucchini and Carrot Saute
Green Beans
Cantaloupe
Baked Sweet Potatoes
Cornmeal Flapjacks
Fresh Strawberries

Sunday:
Hamburger Steak
Mixed Vegetables
Chips

    I bought a small whole chicken yesterday just so I can try the rotisserie crockpot chicken! Can’t wait!
