Chocolate-covered banana pops
This week we’re talking about the rainforest. Of course, bananas for snacks was an obvious choice. I wanted to jazz them up a bit, though. The kids love fruit, but I have a hard time wanting to eat it (I usually reach for crackers or some other “empty carb” when hunger strikes). Now that I see how easy banana pops are to make, I think they’ll be a staple in our freezer this summer. And delicious! These turned out much tastier than I’d imagined when reading the directions. And you can’t beat how easy they are to make.
What you’ll need:
Bananas, peeled and cut in half
Popsicle sticks
Semisweet chocolate chips or chocolate bark for coating
Sprinkles (optional)
Cut bananas in half and insert a popsicle stick into the flat end. Place on a wax-paper-lined plate and freeze for three hours.
Place chocolate in a microwave-safe bowl or in a double-boiler over hot water. Microwave or heat till melted. Working quickly, dip frozen banana halves into chocolate, using a spoon to coat completely. Immediately pour on sprinkles. Place back on wax paper. Can return to freezer till set, but ours set just while sitting on the counter since the bananas were already frozen. Enjoy!
