This week’s Muffin Tin Monday meal had no theme….so I just filled it with whatever my kitchen stocked! I feel I’ve been getting into a “tin rut” lately, so I tried to add in a couple of out-of-the-ordinary “surprises” this time.
(L to R, top to bottom: Strawberries, Heart to Heart cereal, bananas, cheddar, salsa, corn tortilla chips, soy chicken, cottage cheese, Goldfish Grahams, pickles, Goldfish, and of course, more frozen blueberries.)
**Our kids, especially G, have once again become smitten with all-things-blueberry. We’ve exhausted our supply of frozen berries from our picking last summer. The frozen blueberry prices in the stores are so freakishly high right now….don’t know why….so we finally told G that he’d have to wait for summer berry-picking season to have more. Well, Ken gave in and bought G a four lb. bag of those frozen gems this week, even though they cost us heavily ($13!!). The things you do for your little ones. ;)

I wish I could get my kids to eat blueberries – the only way they will eat them is in pancakes. Perhaps it’s my own fault though, I don’t eat them either. Love the cottage cheese… need to remember that one next time I’m at the store.
