This week’s Muffin Tin Monday for us was pancakes! It’d been a long day, and I wanted to do something special for the kids — they were overtired and ready for bed early (which I accommodated), so I whipped up some quick banana pancakes (G mashed the bananas — he was so proud!) and put some fun toppings in our mini tins: Bananas, coconut, mini mallows, chocolate chips, dried blueberries, and sprinkles.

Everyone always comes up with the best ideas. My muffin tins are pretty much the same each week. Love this idea. I think I’ll have to steal it :-).
