Snack mix with “a-peel.”

Try as I might, I just can’t get the kids to like trail mixes. I try to explain to them that they are both each 1/4th comprised of trail mix (I ate a LOT of it while I was pregnant), but that doesn’t seem to impress them. I stand that it’s one of the most portable, healthy, and fun-to-eat snacks around. I just won’t give up.

At last, I have found a recipe that they love and of which they ask for second helpings. And it’s apple-y, cinnamon-y, and a salty-sweet combo at its finest.

Apple snack mix

Cinnamon-Apple Chex Snack Mix

5 cups Wheat Chex cereal
1 cup lightly salted whole almonds
1/4 cup butter
1/3 cup packed light brown sugar
2 tablespoons light corn syrup
1 teaspoon ground cinnamon
1 cup chopped dried apples
1/2 cup vanilla yogurt-covered raisins

1. In large microwavable bowl, mix cereal and almonds.
2. In 2-cup microwavable measuring cup, microwave butter, brown sugar, corn syrup and cinnamon uncovered on High about 2 minutes, stirring after 1 minute, until mixture is boiling; stir. Pour over cereal mixture, stirring until evenly coated. Microwave uncovered on High 3 minutes, stirring and scraping bowl after every minute. Stir in apples; microwave uncovered on High about 2 minutes or until apples just begin to brown on edges.
3. Spread on waxed paper or foil to cool, about 5 minutes. Place in serving bowl; stir in raisins. Store in airtight container. Makes 16 1/2-cup servings.
