G and I realized this week that we had two unused lemons in the refrigerator’s produce drawer with no certain purpose. Hm. Something lemony and wonderful would be a fantastic idea as we wrap up these dog days of summer.
Once again, I pulled out my old-faithful cookbook of late, The Good Home Cookbook. I knew just what recipe we’d try:

So, we proceeded to pull out everything we needed to create this treat. (Lemony desserts always require more equipment because of the zesting and juicing and all.)
G is quite the pro at juicing lemons. He reminds me, too, that he can scoop out the lemon pulp to eat after he’s done. I have no idea how this kid has any enamel left on his teeth whatsoever.
And if you couldn’t tell from the recipe itself, here’s another clue that, although I talk the healthy food talk, we don’t often walk the healthy food walk.
Yes, that’s G’s finger scraping off every last bit of butter from the wrapper to eat it. “I LOVE butter, Mommy! I LOVE it, I LOVE it, I LOVE it!” I think he’d request a birthday cake made completely of butter this year if I left it entirely up to him.
After a brief round of front-yard golf, we came inside to slice and eat our finished lemon cake tea bread.
We shared a loaf with my parents to enjoy on their trip to the beach this weekend….but the rest is waning fast.
